Peter, the owner of Olespana Whiskey & Tapas Bar, focuses on traditional, rustic cooking to introduce well-known dishes from the North, Galicia, to the South, Andalusia, of the Mediterranean cuisine of Spain.
 
Upon entering Olespana Whiskey & Tapas Bar, one notices the wonderful décor that was designed by Peter with the help and support of the Head Chef, Rafael.
 
The stunning design features upside down Victorian tubs as chandeliers, real pianos where the draft beers are placed, and walls decorated with vintage radios from the 40s.
 
Our bar was created and made by the Chefs, who are very innovative. It's a mixed style between tile work of Gaudi and Plaza de España (Seville).
 
These kinds of details evoke the spirit of the old continent.
 
Both Chefs have been leading the construction since Day 1 of remodeling and designing of the old Mt. Auburn Grill (Decades-Old Dive Bar in Watertown).
 
This is Peter's dream come true.
 
He is the mastermind behind this genius and he created the most authentic style that a restaurant can have.
